FIVE top Aussie chefs reveal their favourite foodie experiences around the country.

STEFANO MANFREDI, Balla at Sydney’s The Star casino

Favourite food experience

Mushroom picking in Oberon, NSW. The beautiful state forests and national parkland provide an ideal environment for exotic wood mushrooms, which are coveted by some of Sydney’s top restaurants. In autumn, around April and May, you can find delicious saffron milk cap and bolete mushrooms. After a day picking mushrooms, I’d spend some time exploring the region with a trip to the Blue Mountains National Park, the Jenolan Caves, or the spectacular scenery around Kanangra Boyd National Park.

Favourite restaurant

Faheem’s Fast Food on Enmore Rd, Enmore in Sydney. Unpretentious, delicious food served in a family atmosphere. I can totally relax there.

Best food market

Flemington produce markets.

It’s a must-do in summer and autumn when there is lots of local produce from Sydney’s growers. I love going there just for the smell of fresh summer basil. The Pyrmont Growers Market is also fantastic. They happen on the first Saturday of each month. It’s a great opportunity to support small-scale farmers growing unusual produce, as well as meet artisan food producers.

RICK STEIN, Bannisters on the NSW South Coast

Favourite food experience

The outskirts of Sydney, such as the old part of Bankstown and Cabramatta, are great for Vietnamese and Lebanese produce, as well as authentic markets and restaurants. You can literally smell the amazing Asian herbs, hot spicy chillies and Vietnamese noodle soups on the boil.

Favourite restaurant

Icebergs. On the cusp of South Bondi Beach, Icebergs is more than an institution. It has brilliant Italian seafood, fantastic wine and that iconic view over Bondi beach and the Icebergs pool.

Best food market

The Prahran Market in Melbourne is definitely a favourite. It’s the oldest one in the city and full of all those hard-to-find quirky ingredients, including some heritage varieties of fruit and vegetables. The fish, beef and locally made Middle Eastern ingredients are all fantastic.

“A jazz musician can improvise based on his knowledge of music. He understands how things go together. For a chef, once you have that basis, that’s when cuisine is truly exciting.” – Charlie Trotter
